Years ago, my friend, Debra, introduced me to the easiest and most delicious key lime pie. With my love of all things citrus, this is certainly in my top 3 favorite desserts of all time! (Remember, my favorite is Mrs. L's Lemon Pound Cake...but this might be my #2 favorite!)

 

I vividly remember that Debra laughed when I asked for the recipe. She said it was SO EASY! She's not kidding. You can have it made in minutes. It's extra easy if you make it with a store-bought graham cracker crust, but I prefer the pie with a homemade graham cracker crust. The homemade crust adds a little prep time, but it's so worth it!

 

Since this pie is so easy to make, you'll want to keep the ingredients on hand so that you can whip it up quickly for family dinners or parties with friends. It's a very impressive and delicious dessert! Can't wait for you to try it!

 

 

 

Written Tutorial

Step 1: Preheat oven (350° F) and gather all of the ingredients.

For the graham cracker crust, you'll need:

  • 1.5 cups of crushed graham cracker crumbs (approximately one package/sleeve of graham crackers)

  • 1/3 cup of white (granulated) sugar

  • 6 tablespoons of melted unsalted butter

 

For the pie filling, you'll need:

  • 1 can (14 oz) of sweetened condensed milk

  • 3 egg yolks

  • 1/3 cup plus 1 tablespoon of key lime juice

 

Step 2: Create the pie crust.

      • In case you missed it in step 1, preheat the oven to 350° F.

      • Put the 1.5 cups of crushed graham cracker crumbs, 1/3 cup of granulated sugar, and 6 tablespoons of melted unsalted butter into a mixing bowl. (Helpful tip: 1.5 cups of crushed graham cracker crumbs is approximately one package/sleeve of graham crackers. You can place the graham crackers in a food processor OR crush inside a Ziploc bag to create graham cracker crumbs.)

      • Use a spoon to mix the crumbs, sugar, and butter together.

      • Put the graham cracker mixture into an 8 inch pie pan.

      • Press mixture into the pie pan. I use the bottom of a measuring cup to gently press the pie crust into place. I then use my fingers to mold the edges of the pie crust.

      • Place the pie crust into a preheated 350° F oven.

      • Bake pie crust for 8 minutes.

      • Allow the pie crust to cool for at least 10 minutes before moving on to the pie filling step.

       

      Step 3: Create the pie filling.

      • Pour 1 can of sweetened condensed milk, 3 eggs yolks, and 1/3 cup + 1 tablespoon of key lime juice into a mixing bowl. (I know. That's a random amount of key lime juice, but I promise it's the perfect measurement. The pie will have a great lime flavor but will not be too tart!)

      • Mix ingredients together.

      • Pour the pie filling into the pie crust.

       

      Step 4: Bake and chill pie.

      • Place the pie into a preheated 350° F oven.

      • Bake pie for 10 minutes.

      • Allow the pie to cool for at least 20 minutes on the counter. Then place the pie in the refrigerator to chill. I prefer to leave the pie in the refrigerator for at least 2-3 hours before serving.

      • This pie is best with a dollop of whipped cream! I prefer to cut a slice and then add the whipped cream to the slice before serving.
